piquant potato salad

Potato Salad

6 medium potatoes
3 tbsp olive oil
1 tbsp cider vinegar
1 tsp dry mustard
1 tsp salt
⅛ tsp black pepper
2 hard boiled eggs, chopped
1 cup finely chopped celery
¼ cup chopped red pepper
½ cup chopped green onion
¼ cup sliced kalamata olives
½ cup mayonnaise

  1. Cook potatoes in boiling salted water for 25-30 minutes
  2. Mix olive oil, vinegar, mustard, salt and pepper.
  3. Toss with potatoes and refrigerate.
  4. In medium bowl mix egg, celery, red pepper, onion, olives and mayo.
  5. Add to potatos just prior to serving and mix.

This is way better than any pre-made potato salad caca from the supermarket. Trust me.
