Burrito Bowl

1 cup brown rice
1 ear of corn
1 avo mashed
lime
salt & pepper
1 can black beans
grated sharp white cheddar cheese
some lettuce
salsa or homemade pico de gallo
a few broken tortilla chips
Greek yogurt
ground beef cooked with taco seasoning (optional)

  1. Cook brown rice – best in a rice cooker (1 cup rice + 2 cups water)
  2. Steam ear of corn for 10 minutes
  3. Cut the kernels off the corn and set aside
  4. Add a squeeze of lime, salt & pepper to the smashed avo aka guacamole, and stir it up. Set aside
  5. Slowly warm the beans
  6. Cut up some of the lettuce into little pieces
  7. When the rice is done put some into a bowl
  8. Spoon some beans on top of that and add some corn
  9. If you’re using the taco meat, throw some on now
  10. Put as much cheese as you like on that so it gets all melty
  11. Add a glob of guacamole and a dollop of Greek yogurt (basically sour cream in my opinion)
  12. Toss on some lettuce and your favorite salsa (homemade is best!)
  13. Sprinkle an ample helping of broken tortilla chips over everything and you’re done!

You can usually keep these things on hand at all times. If you suck at cooking, you can impress your friends and family real quick with this one.
